The Best Hello Dollies – A Gooey Southern Favorite
The gooey Layered Bar Your Southern Childhood Forgot to Mention (But Shouldn’t Have)
Why You’ll Love Hello Dollies
This ain’t your average bar. These are the kind of gooey, chocolatey, coconutty miracles that show up on the church potluck table and disappear faster than you can say “who brought those?” Every Southern mama had her own version, but this one’s straight from my mama — and just like her, it never lets you down.
Whether you know them as Magic Bars, 7-Layer Bars, or The Best Hello Dollies, the combo is the same: buttery graham cracker crust, melty chocolate chips, sweet coconut, crunchy pecans, and a pour of sweetened condensed magic that brings it all together. Nostalgia never tasted so good.
Ingredients for Hello Dollies
- 1 envelope graham crackers (about 9 crackers), crushed
- 1 stick butter or margarine
- 1 package semi-sweet chocolate chips (12 oz)
- 1 small can shredded sweetened coconut (about 1½ cups)
- 1 cup chopped pecans
- 1 can Eagle Brand sweetened condensed milk
How to Make Hello Dollies
Preheat your oven to 350°F. Place your stick of butter directly into a 9×13-inch baking pan and let it melt in the oven while it preheats — this is your Southern shortcut to less mess and more flavor.
Meanwhile, crush up that envelope of graham crackers (a zip-top bag and rolling pin do the trick, or go full chaos and crush ’em with your hands). Once the butter is melted, remove the pan from the oven and stir the crumbs right in. Press it down into a buttery, sandy crust across the bottom of the pan.
Next, layer on the goodness:
- Sprinkle the chocolate chips evenly.
- Then a happy snowstorm of coconut.
- And a hearty scattering of pecans.
Finally — the magic move — slowly pour that glossy can of Eagle Brand sweetened condensed milk over the entire pan, letting it seep into every crevice.
Bake for about 30 minutes, or until the edges are golden and the top looks set. Let cool completely before slicing (I know, I know — but it’s worth the wait).
Tips & Variations
- P.S. These are also called Magic Bars, Seven Layer Bars, or even Coconut Dream Bars — but in my kitchen, they’ve always been Hello Dollies.
- Swap the chips: Butterscotch, white chocolate, or a mix for a twist.
- Make it nut-free: Skip the pecans if allergies are an issue.
- Freezer-friendly: Once cooled, these bars freeze beautifully.
- Don’t rush the cooling: They slice best when fully set — even better chilled.

Reflection
Every time I make these gooey Southern bars, I’m back in my mama’s kitchen — barefoot, probably too nosy for my own good, watching her layer love into a baking pan. Isn’t it funny how a dessert can carry a whole generation of memories?
